Earlier this week, I decided to bake one of the best things I know: cinnamon buns. I love surprising family and friends with out-of-the-oven cinnamon buns. Oh! Nothing in this world is better in my eyes, and this recipe? The very best! We’ve had it for as long as I can remember in our family and have been using it again and again when baking buns. The best thing about baking these delicious cinnamon buns is the amazing homely smell that spreads around the apartment.

For 25 delicious cinnamon buns you need:

  • 2 cups or 500 dl milk
  • 2/3 cups or 150gram butter
  • 2 cups icing sugar
  • 1 package dry yeast
  • 0,5 teaspoon cardamom
  • 0.5 teaspoon cinnamon
  • 0.5 teaspoon salt
  • 5 cups or 750gram flour
Cinnamon filling
  • 1/5 cups or 115grams butter
  • 1/5 or 115grams sugar
  • 2 tablespoons cinnamon powder

In a medium sized pot, mix together butter, icing sugar and half of the milk. Let it cook until the butter is all melted. Set aside and add the rest of the milk. Let it cool until it is lukewarm (100f or 37 Celsius)

In another bowl, mix together all the dry ingredients, flour, cinnamon, dry yeast, cardamom, and salt. Mix together with a wooden spoon.

In a bowl of a stand mixer, pour the butter mixture into the bowl. Add half of the flour mixture and turn on the mixer on a low speed. When the dough is well incorporated, add the remaining flour mixture and let it mix for at least 10 minutes on a low to medium speed. (If you don’t have a mixer, incorporate the flour and the butter mixture in a bowl. When everything is mixed, knead the dough on a lightly floured surface for at least 10 minutes)

As soon as the dough is ready, roll out on a lightly floured surface into a rectangle. Spread melted butter, cinnamon and sugar all over the dough. Beginning at the longer side of the rectangle, role the dough and pinch the edges together to seal. Cut into the desired sizes. With this recipe, you can get everything between 20-30 rolls.

Coat the bottom of a baking pan with butter. Place cinnamon roll slices close together in the pan (make sure it is not too close since the dough will rise). Let it rise until noticeable, about 60 to 90 minutes.

When the dough is nearly finished rising, preheat the oven to 230 Celsius or 445 Fahrenheit. Bake in the middle of the oven for 12-16 minutes, depending on the type of oven you have.

My favorites toppings on cinnamon buns are cream cheese glaze or salted caramel sauce. Below I have included ingredients to both. Use them if you want to add a little extra to your cinnamon buns.

Cream cheese glaze
  • 4 ounces cream cheese, softened
  • ¼ cup salted butter, softened
  • 1 to 1½ cups powdered sugar
  • ½ teaspoon vanilla extract
  • 1 to 2 taplespoon milk
Salted caramel topping
  • 1/2 cup butter
  • 1 cup dark brown sugar
  • 3 tablespoons heavy cream
  • 0.5 teaspoon salt or more (taste to determine how salty you want the caramel).

Combine butter and dark brown sugar in a small saucepan over medium heat. Cook until sugar dissolves in the butter. Stir in the heavy cream salt. mix well but do not bring to a boil. Sauce is supposed to be thick

Tip: pour half of the salted caramel sauce over the cinnamon buns before you put them in the oven. The other half of the caramel sauce and the cream cheese you can pour over the cinnamon puns after you take them out of the oven. Just remember to let the cinnamon buns cool down before you have the cream cheese over or else the glaze will melt.

Should I use unsalted or salted butter?

You can use whichever you like. If you use unsalted butter, remember to use salt.

What type of flour should I use?

I usually use all-purpose flour, but I’m sure bread dough would also do the trick.

What should the dough feel like?

The dough should be slightly sticky, but still very soft. It should barely not be sticking to the bowl. If you add too much flour and the dough feels heavy, your rolls will also get a little on the heavy side.

Can I add pecans,walnuts, raising etc?

Yes, feel free to experiment with different flavors.

My buns are slightly uncooked/ over cooked?

Every oven is different, be sure to adjust the baking time depending on your oven. The buns are perfectly baked at 15 minutes with my oven.

Immediately serve the buns warm. You can also freeze the buns for later. Just remember to let them cool completely before you put them in the freezer:)
